Andrew Bradie’s cheesy shepherd’s pie is humble comfort at its finest—born of quiet pandemic days, when time slowed down and the stove stayed warm. During COVID, newly retired and grounded by restrictions, Andrew began cooking large meals for his children, grandkids, and in-laws nearby. He made shepherd’s pie often, adapting and perfecting it over time, sometimes from memory, sometimes from dog-eared recipes lost along the way. Its cheesy, savoury layers became a family staple—and a way to connect when the world felt uncertain.

Rooted in tradition, seasoned by experience, and shared with love, this dish carries forward the spirit of care Andrew has always extended—to his family, and now, to his community.

Ingredients for
Andrew's Cheesy Shepherd's Pie

Meat Filling:

  • 4 tbsp olive oil
  • 2 yellow onions, chopped
  • 2 1/2 lbs lean ground beef
  • 2 tsp dried parsley leaves
  • 2 tsp dried rosemary leaves
  • 2 tsp dried thyme leaves
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 2 tbsp Worcestershire sauce
  • 4 garlic cloves, minced
  • 4 tbsp all purpose flour
  • 1 1/2 cups of shredded cheese (Cracker Barrel Double Cheddar at Sobeys)
  • 1 cup Half & Half 10% cream
  • 1 cup frozen corn kernels

Potato Topping:

  • 3 - 4 lbs mashed potatoes (2 pkgs of Main St. Bistro Signature Mashed Potatoes in Deli Section at Sobeys)
  • 1 1/2 cups shredded cheese (Cracker Barrel Double Cheddar at Sobeys)

How to Make
Andrew's Cheesy Shepherd's Pie

Make meat filling:

  1. Oil a large frying pan over medium heat and brown beef and onions.
  2. Add parsley, rosemary, thyme, salt and pepper and stir well.
  3. Cook for 6 minutes
  4. Add Worcestershire sauce and garlic and stir.
  5. Add flour and integrate into mixture.
  6. Add 10% cream and 1 1/2 cups of cheese and stir until well incorporated.
  7. Add frozen corn.
  8. Simmer for 5 minutes and set mixture aside.
  9. Make mashed potatoes and set aside.

Assemble the Casserole:

  1. Pour meat mixture into a 9 x 13 inch baking dish.
  2. Spoon mashed potatoes on top of the meat mixture and spread evenly.
  3. Sprinkle 1 1/2 cups of shredded cheese evenly on top of potatoes.
  4. Preheat oven to 400°F and bake uncovered for 25 - 30 minutes.
