This apple pie filling is Brenda’s love letter to Bill. Over the years, she tailored it to his taste—just the right balance of sweet and spiced, soft apples that still held their shape, and a fragrance that filled the house like a warm embrace. Every time she baked it, she was saying “I love you” in the way she knew best. Bill adores Brenda—and it shows. Their love is the kind you can feel just by being in the same room. Sharing this filling now, for the first time, is a tribute to a marriage that has weathered everything life has brought, still sweet, still strong, and still holding together beautifully.

  • 1 cup white sugar
  • 1/2 tsp cinnamon
  • 1/4 cup flour
  • Dash of salt
  • 8 – 10 Mutsu (or Macintosh) apples, pealed
  • 2 Tbsp butter

How to Make
Blockhouse Bill's Favourite Pie Filling

  1. Roll out your pastry dough to the desired size and thickness. One for the top and one for the bottom of your pie. Cut ventilation holes in the top pie crust. Preheat oven to 350°F.
  2. Add sugar, cinnamon, flour and salt to a large mixing bowl and mix together. Thinly slice apples into a large bowl and stir apples into dry mixture until well coated.
  3. Dump bowl ingredients into the bottom of the unbaked pie shell and pack down slightly to make even. Break your butter up into several small cubes and place on top of your apples. Then sprinkle the top of apples with additional cinnamon to taste.
  4. Brush the edges of your bottom pastry with a little water and place your top pastry (with pre-cut holes for ventilation) over the apples.
  5. Cut off the excess pie crust that is hanging over the edges of your pie plate and pinch the edges of the top and bottom pastry together to seal the pie.
  6. Bake at 350°F for 45 – 60 minutes on the middle rack of the oven. Test the apples for doneness by poking the apples through one of the pre-cut holes. Serve warm or cold with vanilla ice cream or cheddar cheese.
